Earl Grey

Earl Grey

Description

This Earl Grey uses a larger leaf size which encourages the finer notes of both earthy black tea notes as well as the tart citrus to balance in a suspended harmony. The larger leaf size also allows one to choose to whether your preference might be to consume black or with the addition of milk.

Story

The name of this tea is attributed to the British Prime Minister of the 1830’s. Charles Grey, 2nd Earl Grey. The addition of the Bergamot rind was thought to give the tea a similar bouquet to that of more expensive Chinese Black Teas of the time and even has been said that this “natural Flavouring was a method to copy Chinese teas when the British had found a way to later propagate tea in both India and Sri Lanka.

Processing Method

This black tea is picked from an area of Sri Lanka at a higher elevation. The teas are picked then withered for a lot longer than other types of black tea to allow the moisture content to be naturally expelled. The leaves are then exposed to a rolling process to bring the “tea Juices” to a flavour standard. Before the final process in the creation of the tea, the natural botanicals of Bergamot citrus peel is added to the raw leaf, mixed through and then the final stop fermentation process is applied that prevents the leaf from further oxidizing and stabilizing the leaf.
