The production of yellow tea was further refined during the Ming Dynasty (1368-1644 CE). At this time, the processing techniques were improved, resulting in a tea with a distinct flavour profile. What makes yellow tea unique is the additional step known as "men huang" or sealing yellow. After the initial fixation, the tea leaves are covered with a cloth or paper and left to yellow. This step involves a slow oxidation and enzymatic process that gives the tea its characteristic yellow hue. Following the "men huang" stage, the leaves are dried to halt the oxidation process completely. This final drying step distinguishes yellow tea from green tea, which is not allowed to undergo the same level of oxidation.
