In China, this tea is known as "Dan Cong" meaning a single tree; the farmers that produce our delicious tea care for each tree as a family passed down an inheritance. Honey Phoenix has a delicate toasted honey flavour that imparts a sublime caramel nuanced finish.

The Story
Honey Phoenix Oolong, often referred to as "Mi Lan Xiang" in Mandarin, is a type of Dancong Oolong tea that is known for its unique honey-like sweetness and floral aroma. Honey Phoenix Oolong comes from Phoenix Mountain (Fenghuang Shan) in the Guangdong province of China. The area is renowned for producing Dancong Oolong teas, which are famous for their individual and distinct aromatic profiles.
Dancong Oolongs are often made from single bush varietals, meaning each tea plant may produce leaves with unique flavour characteristics. The Honey Phoenix Oolong is crafted from tea bushes that exhibit a honey-like sweetness in their leaves. Honey Phoenix Oolong is often prepared using the Gongfu Cha method, a traditional Chinese tea ceremony that involves multiple short infusions.
